Every summer, somewhere between Transylvania and Wallachia, few villagers perpetuate a millenary tradition: they bring their sheeps to graze in the mountains. Using old methods, under the same conditions as before, they make a cheese highly comparable with any world-class brand. The shepherds are tough and supportive people who work twenty-four hours a day, surrounded by beautiful landscapes but into working conditions from the last century. Dogs are their only protection against wild animals.
